Fish, stewed vegetables

Tender, flavorful, juicy fish.
I used rolls of flounder, but you can use the fillet, sliced not too finely.

Ingredients

- 400 g fillet of fish (flounder, perch, trout, etc.)
- 350 g tomatoes
- 200 g of pepper
- 300 g zucchini
- leek (or 150 grams of onions)
- 1 sprig of rosemary (optional)
- salt
- pepper
- vegetable fat
Preparation
Leek cut into rings (onion finely chopped).
Zucchini cut into cubes.
Pepper remove seeds, cut into cubes.
Dice tomatoes.
In vegetable oil fry the onion.
Add zucchini.
Pepper.
Tomatoes.
Season with salt and pepper.
Add rosemary.
Simmer, covered, for 10 minutes.
Add fish.
A little salt and pepper.
Cover with a lid.
Simmer for about 20-25 minutes.
