Vegetable soup with minced meat

Ingredients

- 500 grams of minced meat (all to taste)
- 300 g zucchini
- 300 grams of eggplant
- 250 g of cabbage
- 300 g tomatoes
- 300 g celery stalks
- 150 g of carrots
- leeks or onions 150 g
- herbs to taste
- salt
- pepper
- vegetable fat
Preparation
Onion cut into half rings.
Eggplant cut into cubes.
Zucchini cut into cubes.
Cabbage finely cut into strips.
Dice tomatoes.
Celery, finely chopped.
Carrots grate on medium grater.
Vegetable oil lightly fry the onion.
Add carrots, fry a little.
Add eggplant.
We should add the zucchini and simmer for 5 minutes.
Add the cabbage.

Tomatoes. Simmer for another 5 minutes.
Then pour 2.5 liters of water, salt and pepper.
Bring to a boil.
Add minced into small pieces.
Cook for 15 minutes.
