Pilaf

I offer a recipe that very love in our family. So prepare pilaf my dad.
Pilaf turns fragrant, crisp, juicy.
I find it difficult to say exactly how many servings turns, but it turns out a lot.

It is possible to submit pilaf salad, or coarsely chopped tomatoes and onions.
Ingredients

- 1.5 kg of meat (lamb, pork or beef)
- 1 kg of rice (variety ideally devzira)
- 600 g of carrots
- 500 g onion
- 1 tbsp cumin
- 1 tbsp barberry
- frac12- tbsp turmeric
- 1 head of garlic
- red pepper
- ground black pepper
- salt
- vegetable fat
Preparation
Onions cut into strips.
The meat cut into small pieces.
Carrots cut into cubes.
The large amount of vegetable oil (about 150 ml) fry the onions until golden brown.
Add the meat and fry.
Add carrots and simmer for 5-7 minutes (do not cover the lid.)
Add cumin, barberry, turmeric, salt and pepper and mix.
Pour the water so that it covers the meat.
Cover and simmer for 35-40 minutes on medium heat.
Figure rinsed 5-6 times in cold water.
Then add rice (do not mix with the meat!), Smooth.
Carefully pour hot or warm water so that it covers the rice by 2 cm.
A little salt.
Cover and cook until until the rice has absorbed the water.
Then, in the middle of a put garlic, press it into the rice.
Wooden stick to make holes (rice and meat stir) for the steam.
Cook, covered until tender (about 20-25 minutes).
