Lamb stew with eggplant

Lamb and eggplant is a wonderful duet.

Ingredients

- 500 g fillet of lamb (or pork, beef)
- 500 g eggplant
- 350 g tomato
- 150 g onions
- 2-3 cloves of garlic
- salt
- pepper
- vegetable oil
Preparation
Eggplant cut into cubes.
If the eggplant is bitter, they should be salt and leave for 30 minutes, then rinse in cold water.
Onion cut into half rings.
Tomatoes cut into cubes.
Meat cut into small pieces.
Vegetable oil to fry the onions.
Add the meat and fry.
Add the eggplant, simmer, covered for about 20 minutes.
Add the tomatoes, salt and pepper, simmer, covered until tender (about 20-30 minutes).
5 minutes until cooked add squeezed through Chernogolovka garlic.
