Pork stew with vegetables and mushrooms

Ingredients

- 500 g pork (fillet)
- 300 g of eggplant
- 300 g of zucchini
- 300 g tomatoes
- 300 g mushrooms
- 200 g carrots
- 200 g onions
- 3 cloves of garlic
- greens
- salt
- pepper
Preparation
Pork cut into cubes.
Onion cut into half rings.
Carrots grate or cut into strips.
Zucchini peel, cut into cubes.
Eggplant cut into cubes (if the skin is thick, clean), salt, and leave for 30 minutes, went to the bitterness. Then rinse in cold water and a little squeeze.
Tomatoes cut into cubes.
Cut the mushrooms into slices.
Vegetable oil to fry pork and onion.
Add the carrots, simmer for 5 minutes.
Add zucchini and eggplant, simmer for 15 minutes.
Then add the mushrooms and tomatoes, salt and pepper, simmer for 5-7 minutes.
Add the chopped garlic and parsley and simmer for another 2-3 minutes.
