Eggplant baked with mushrooms

Ingredients

- 500 g eggplant
- 400 g mushrooms (fresh or frozen)
- 200 g sour cream (15-20%)
- 150 g onions
- salt
- vegetable oil
Preparation
Eggplant cut into cubes.
Aubergines with salt and leave for 30 minutes.
Then rinse them in cold water, squeeze.
Onion mince.
Cut the mushrooms into slices.
Vegetable oil to fry the onions.
Add eggplant, cook for 5-7 minutes.
Then add the mushrooms, salt and fry for 5-7 minutes.
Put the eggplant with mushrooms in a baking dish.
Pour the sour cream, put in the oven.
Bake at 180 degrees for 25-30 minutes.
