Cauliflower, cooked with eggplant and sausage

Ingredients

- 500 g cauliflower (fresh or frozen)
- 300 g of eggplant
- 200 g sausage (or sausage, ham etc)
- 150 g carrots
- 150 g onions
- herbs to taste
- vegetable oil
- salt
- pepper
Preparation
The cabbage out on the inflorescence.
Boil cabbage until tender (cook 10-15 minutes after boiling).
Finely chop the onion.
Carrots to grate on medium grater.
Eggplant cut into cubes.
If the eggplant is bitter, they should be salt and leave for 30 minutes.
Then rinse in cold water.
Sausage cut into slices.
Finely chop the herbs.
Onion is fried in vegetable oil.
Add carrots, a bit of fry.
Add the eggplant and fry for 7-10 minutes.
Add sausages.
Salt and pepper to taste.
Then add the cabbage (drain the water).
Simmer for 3-4 minutes.
The finished dish and sprinkle with parsley.
