Chicken leg stewed with eggplant and tomatoes

Instead of chicken, you can use pork, beef or lamb, but it is necessary to put out longer.
Ingredients

- 1 kg chicken drumsticks (or wings, legs, bedryshek etc.)
- 400 grams of eggplant
- 400 g tomatoes
- 200 g onion
- salt
- pepper
- Dried or fresh herbs - to taste

Preparation
Eggplant cut into cubes.
If bitter eggplant, they should salt and leave for 30 minutes, then rinse in cold water.
Mince the onion.
Dice tomatoes.
Onion fry in vegetable oil.
Add eggplant and mix.
We should add the tomatoes, stir and fry for 3-4 minutes.
Add shin, salt and pepper, add dried or fresh herbs.
Stir, cover with a lid.
Simmer over medium heat until tender (about 30 minutes).
