Salad with eggplant, tomatoes and mozzarella

A delicious, hearty but light salad.
Instead you can use eggplant mushrooms.
Mozzarella advise nothing to replace it adds an interesting flavor salad.
The amount of said ingredients is obtained 4-6 servings.

Ingredients

- 250 grams of eggplant
- 100g mozzarella
- 150 g tomatoes
- 150 g of green salad
- leek (or 150 grams of onions)
filling:
- 3 tbsp vegetable oil
- 2 tsp mustard
- salt
- pepper
Preparation
Onion cut into half rings (onion finely chopped).
Eggplant cut into cubes.
Vegetable oil lightly fry the onion.
Add eggplant and fry for about 10 minutes.
Tomatoes cut into small pieces.
Mozzarella cut into small pieces.
Prepare filling.
Mix the butter and mustard.
Season with salt and pepper.
Stir in the eggplant, tomatoes, mozzarella, lettuce.
Add dressing and mix.
