Eggplant stewed with olives and tomatoes

Ingredients

- 500 grams of eggplant
- 300 g tomatoes
- 100 g of olives or olive
- 150 g onion
- herbs to taste
- vegetable fat
- salt
- pepper
Preparation
Finely chop the onion.
Eggplant cut into cubes.
If bitter eggplant, they should salt and leave for 30 minutes.
Then rinse in cold water.
Dice tomatoes.
Olives or olives cut into rings.
Finely chopped greens.
In vegetable oil fry the onion.
Add eggplant and simmer for 10 minutes.
Add the tomatoes and simmer for 10 minutes.
Add olives, a little salt and pepper and simmer for 3-4 minutes.
At the end of cooking add the herbs, stir, remove from heat.
