Chocolate souffle with cherry sauce

Ingredients

souffle:
- 500 ml cream 33-35%
- 100 g of chocolate (milk or bitter)
- 3 egg yolks
- Sugar 100 g
- 2 tsp gelatin
Sauce:
- 500 g pitted cherries (berries or any taste)
- Sugar 100 g
- 2 tsp starch
Preparation
Gelatin in 100 ml of cold boiled water and leave for 1 hour.
Yolks mixed with 50 g of sugar.
Heated with stirring in a water bath until thickened (about 15 minutes after being heated mass).
The chocolate is melted.
Mix the egg yolks and warm warm chocolate.
Gelatin, bring to a boil, but do not boil. Then cool.
Whip cream with 50 grams of sugar.
In add cream chocolate-yolk weight, gelatin, stir.
Put a weight of the refrigerator for 3-4 hours.
Preparing the sauce.
Cherries mixed with sugar, add 100 ml of water, bring to a boil, boil for about 5 minutes.
Starch was dissolved in 100 ml of water and mix well.
Add starch cherries, bring to a boil and immediately remove from heat.
Cool.
Souffles ready to put on the plates, with the help of culinary syringe or spoon.
Drizzle with sauce.
