Ingredients
- 300g pumpkin (peeled)
- 2 eggs
- 50g sugar
- 200 ml of buttermilk (or yogurt)
- 100 g of dried berries (I cherries, cranberries, physalis)
- 1 tsp soda (no slides)
- 200-250 g flour
- vegetable fat
Preparation
Pumpkin rub on a medium grater.
If the pumpkin strongly juicy, juice squeeze.
Beat eggs with sugar.
Add yogurt and mix.
Add pumpkin and berry mix.
Add soda (it is not necessary to extinguish) and flour, mix well. Flour may need a little more or less, depending on the richness of the pumpkin.
The finished dough should be hard to drop from a spoon.
In a frying pan heat the oil.
Put pancakes, fry for 5-7 minutes.
Turn over and fry for another 5-7 minutes.
