Pumpkin muffins

Soft, tender, flavorful cupcakes.

Ingredients

- 300 g pumpkin (peeled)
- 150 g butter
- 150 g sugar
- 3 eggs
- 1 lemon
- 2 tsp. baking powder (or 1 teaspoon of hydrated soda)
- 200-250 g flour
optional:
- fondant or icing (I have done)
- chocolate
- pumpkin seeds
Preparation
Pumpkin grate on medium grater.
If juice will turn out a lot, it must be drained.
With lemon to remove the zest.
Squeeze the juice (just need about 50 ml of lemon juice).
Oil to mix with sugar.
Add eggs, stir.
Add lemon juice, stir.
Add the zest and mix.
Add the pumpkin, stir.
Add baking powder and flour, knead is not very thick dough.
Put the dough in the molds.
To put it not very much, a height of about 2-3 cm
Place in a preheated 180 degree oven.
Bake for 25-30 minutes.
The finished cupcakes can be covered with icing or melted chocolate.
Sprinkle with pumpkin seeds.
