Popular Italian desert.Nezhny, air, like a cloud! In the classic recipe "Tiramisu" used chicken eggs. If you are afraid to use raw eggs, you can replace them quail (they are not subject to salmonellosis).

The amount of said ingredients is obtained 6-9 servings.

Ingredients

  • 4 eggs (I used 18 quail eggs)
  • Sugar 100 g
  • 500g mascarpone
  • 250 g biscuits Savoyardy (about 34 pieces)
  • 350 ml of coffee (instant or brewed)
  • cocoa powder
  • 2-3 tablespoons wine "Marsala" (or any other), or rum, liqueur, brandy, cognac - on request

Preparation

picture - TiramisuSeparate the whites from the yolks.
Yolks with sugar.

picture - TiramisuAdd mascarpone and mix with a spoon or spatula.

picture - TiramisuProteins were whipped into a solid foam.

picture - TiramisuAdd yolk proteins, curd, mix gently.

picture - TiramisuSticks dipped in cold coffee.
The sticks have to dip very fast movement, so they are not soaked.
Prepare the coffee as you like (I added 350 ml 4 tsp coffee).
Optionally, you can add in the coffee wine, rum, liqueur, brandy or cognac.

picture - TiramisuIn the form (form I used size 17-25 cm) tightly put sticks, soaked in coffee.

picture - TiramisuAgain put on a cream sticks, soaked in coffee.

picture - TiramisuOn sticks put the remaining cream, smooth.
Refrigerate for 5-6 hours.

picture - TiramisuThen sprinkle cocoa through a sieve.

Cut must be very careful, because dessert is very gentle.
